This healthy vegetarian option is a delicious way to enjoy a burrito.
Ingredients: Serving 4
- 1 tbsp olive oil
- 3 tbsp onion, chopped
- 3 tbsp green pepper, chopped
- 3 tbsp corn
- 1 can black beans, rinsed and drained
- 4 tortillas, warmed
- 1 cup shredded cheese (cheddar, mozza, vegan or whatever suits your fancy)
- 1 tomato, chopped
- Optional toppings: salsa, sour cream, minced fresh cilantro and cubed avocado
Preparation
- In a non-stick skillet, heat oil over medium heat. Sauté onion, green pepper, and corn until tender. Stir in beans, heath through.
- Spoon about ½ cup of vegetable mixture in center of each tortilla. Sprinkle with cheese and tomato. Fold sides and ends over filling and roll up.
- Serve with optional toppings as desired.
