Black Bean Vegetarian BurritoThis healthy vegetarian option is a delicious way to enjoy a burrito.Ingredients: Serving 41 tbsp olive oil3 tbsp onion, chopped3 tbsp green pepper, chopped3 tbsp corn1 can black beans, rinsed and drained4 tortillas, warmed1 cup shredded cheese (cheddar, mozza, vegan or whatever suits your fancy)1 tomato, choppedOptional toppings: salsa, sour cream, minced fresh cilantro and cubed avocadoPreparationIn a non-stick skillet, heat oil over medium heat. Sauté onion, green pepper, and corn until tender. Stir in beans, heath through.Spoon about ½ cup of vegetable mixture in center of each tortilla. Sprinkle with cheese and tomato.
