This healthy vegetarian option is a delicious way to enjoy a burrito.

Ingredients: Serving 4

  • 1 tbsp olive oil
  • 3 tbsp onion, chopped
  • 3 tbsp green pepper, chopped
  • 3 tbsp corn
  • 1 can black beans, rinsed and drained
  • 4 tortillas, warmed
  • 1 cup shredded cheese (cheddar, mozza, vegan or whatever suits your fancy)
  • 1 tomato, chopped
  • Optional toppings: salsa, sour cream, minced fresh cilantro and cubed avocado


  1. In a non-stick skillet, heat oil over medium heat. Sauté onion, green pepper, and corn until tender. Stir in beans, heath through.
  2. Spoon about ½ cup of vegetable mixture in center of each tortilla. Sprinkle with cheese and tomato. Fold sides and ends over filling and roll up.
  3. Serve with optional toppings as desired.
