This recipe is from the ‘Everyday Detox’ cookbook. This raw, no-bake dessert is a keeper. Pecans, cocoa powder, coconut oil, maple syrup and dates…so simple and yet so delicious. Enjoy!
Ingredients:
Crust and Crumble Topping
- 3 cups raw pecan halves
- 8 soft Medjool dates, pitted
- ¼ cup melted coconut oil
- ½ tsp sea salt
Chocolate Filling
- ½ cup raw cocao powder
- ¼ cup melted coconut oil
- ¼ cup maple syrup, at room temperature
Preparation:
Line a 9-inch square baking dish with parchment paper and set aside.
Crust/Topping: Place the pecans in a food processor fitted with an ‘S’ blade and process until they are ground into a meal. Add the dates, coconut oil and salt and process again until dough sticks together when pressed between your fingers. Reserve 1 cup of this mixture for the topping and press the rest evenly into the baking dish. Set aside.
Chocolate Filling: In a medium bowl, whisk together the cacao powder, coconut oil and maple syrup until smooth. Pour the chocolate filling over the crust and smooth with a spatula.
Sprinkle the remaining crumble over the top of the chocolate layer. Use your hands to gently press the crumble into the chocolate. Place in the freezer to set for at least two hours and then cut into bars and serve chilled.
Store these in the freezer in a sealed container.
