This is a simple, flavourful spring recipe. The potatoes give it a creamy texture and the lemon juice gives it a yummy zing.

 

Ingredients: Serves 4

  • 1 tbsp olive oil or butter
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 lb asparagus, chopped
  • 1 lb white potatoes chopped
  • 4 cups vegetable stock
  • 1 cup spinach
  • salt and pepper to taste
  • 1 tbsp fresh lemon juice

 

Preparation:

  1. Heat the olive oil in a pot over medium heat. Add the onion and cook for 3 minutes or until translucent. Add the garlic and cook for another minute.
  2. Add the asparagus, potatoes and stock to the pot and bring to a boil. Reduce the heat to medium low, cover and simmer for 15 minutes or until the potatoes are soft.
  3. Add the spinach and salt and pepper. Blend in batches. Serve warm with a drizzle of fresh lemon juice.
