
This is a simple, flavourful spring recipe. The potatoes give it a creamy texture and the lemon juice gives it a yummy zing.
Ingredients: Serves 4
- 1 tbsp olive oil or butter
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 lb asparagus, chopped
- 1 lb white potatoes chopped
- 4 cups vegetable stock
- 1 cup spinach
- salt and pepper to taste
- 1 tbsp fresh lemon juice
Preparation:
- Heat the olive oil in a pot over medium heat. Add the onion and cook for 3 minutes or until translucent. Add the garlic and cook for another minute.
- Add the asparagus, potatoes and stock to the pot and bring to a boil. Reduce the heat to medium low, cover and simmer for 15 minutes or until the potatoes are soft.
- Add the spinach and salt and pepper. Blend in batches. Serve warm with a drizzle of fresh lemon juice.
