I have to admit, when I opened the fridge this morning my Chia Fresca looked like a science experiment gone wrong. But looks can be deceiving and it tasted great.

Lemon water is a great way to kick start digestion and is alkalinizing. This is a great drink to sip on between meals as the fibre can help you feel fuller longer. Chia seeds are rich in fibre, protein, omega 3 fatty acids and potassium. So this is also a great option to rehydrate after hot yoga or an intense workout. Lots and lots of health benefits and very simply to throw together.

Ingredients:

  • 1 1/2 cups of cold water
  • 2 Tbsp  lemon juice
  • 1 Tbsp chia seeds
  • 1 teaspoons maple syrup
  • pinch of cayenne pepper

Preparation:

  1. Mix all the ingredients together in a mason  jar and let cool in fridge for minimum 2-3 hours.
  2. Add a slice of lemon or lime and/or a spring of mint for some added colour and flavour.
