This is a delicious and easy salad to have either on its own or as a side dish. It is also an easy recipe to play around with. Use whatever veggies you have in your fridge and whatever beans or legumes you have in your pantry. The fresh corn and tomatoes of summer make this a delicious and refreshing meal!
Ingredients
- 2 cups cooked quinoa
- 2 green onions, diced
- 1 clove garlic, minced
- ½ cup zucchini, grated
- ½ cup green pepper, finely diced
- ½ cup tomato, finely diced
- 2 ears cooked corn cut from the cob
- 1½ cups black beans
- ¼ cup chopped fresh cilantro
- 2 tbsp olive oil
- juice of 1 lime
- 2 tsp chili powder
- 1 tsp cumin
- sea salt and pepper to taste
- 1 diced jalapeno (optional)
- sliced avocado and greens
Preparation
- Combine quinoa, veggies, beans and cilantro in a bowl.
- Mix oil, lime juice and spices together. Pour over quinoa mixture.
- Serve on a bed of greens with some sliced avocado. For some extra kick, add jalapeno or banana peppers.
